Baingan Bharta Recipe
Smoky baingan bharta — roasted brinjal mashed with onion, tomato and green chilli. Roast the baingan on open flame for authentic flavour.
Ingredients
- 1 large brinjal (baingan)
- 2 onions, finely chopped
- 2 tomatoes, chopped
- 3 green chillies, chopped
- 1 tbsp ginger-garlic paste
- 1 tsp cumin seeds
- 1/2 tsp turmeric
- 1 tsp red chilli powder
- 2 tbsp oil or mustard oil
- Coriander, salt to taste
How to Make Baingan Bharta
- Rub baingan with oil, roast directly on gas flame, turning, for 8–10 mins till skin chars and flesh is soft.
- Cool, peel, mash the flesh with a fork. Reserve.
- Heat oil, add cumin. Add onion, sauté till golden. Add ginger-garlic paste, green chilli.
- Add tomato, cook 5 mins. Add turmeric, chilli powder, salt.
- Add mashed baingan, mix well. Cook 5 mins. Finish with coriander. Serve with roti.
