How to Make Baingan Bharta

  1. Rub baingan with oil, roast directly on gas flame, turning, for 8–10 mins till skin chars and flesh is soft.
  2. Cool, peel, mash the flesh with a fork. Reserve.
  3. Heat oil, add cumin. Add onion, sauté till golden. Add ginger-garlic paste, green chilli.
  4. Add tomato, cook 5 mins. Add turmeric, chilli powder, salt.
  5. Add mashed baingan, mix well. Cook 5 mins. Finish with coriander. Serve with roti.
