Chole Recipe
Punjabi chole — dark, tangy chickpea curry with whole spices. Use tea bags while boiling for authentic colour.
Ingredients
- 1 cup chickpeas, soaked 8 hours
- 2 onions, chopped
- 3 tomatoes, pureed
- 1 tbsp ginger-garlic paste
- 2 tea bags
- 2 tsp chole masala
- 1 tsp red chilli powder
- 1 tsp cumin seeds
- 2 tbsp oil
- Amchur, coriander, salt to taste
How to Make Chole
- Pressure cook chickpeas with salt, tea bags, water — 5 whistles till very soft. Remove tea bags.
- Heat oil, add cumin, then onion, sauté till golden. Add ginger-garlic paste, cook 1 min.
- Add tomato puree, cook 8 mins till oil separates.
- Add chole masala, chilli powder, salt. Cook 2 mins. Add boiled chickpeas with some water.
- Simmer 15 mins. Finish with amchur and coriander. Serve with bhatura or rice.
