Punjabi chole — dark, tangy chickpea curry with whole spices. Use tea bags while boiling for authentic colour.

How to Make Chole

  1. Pressure cook chickpeas with salt, tea bags, water — 5 whistles till very soft. Remove tea bags.
  2. Heat oil, add cumin, then onion, sauté till golden. Add ginger-garlic paste, cook 1 min.
  3. Add tomato puree, cook 8 mins till oil separates.
  4. Add chole masala, chilli powder, salt. Cook 2 mins. Add boiled chickpeas with some water.
  5. Simmer 15 mins. Finish with amchur and coriander. Serve with bhatura or rice.
