Crisp dosa from fermented rice-urad batter. Technique matters more than ingredients — hot tawa, thin spread, quick cook.

How to Make Dosa

  1. Heat flat tawa on high. Sprinkle water — if it sizzles, tawa is ready. Wipe with damp cloth.
  2. Pour 1 ladle of batter in centre. In circular motions, spread thin from centre outward.
  3. Drizzle oil on edges. Cook 2 mins till golden brown and edges crisp.
  4. Optional: sprinkle chopped onion, coriander on top before flipping.
  5. Fold and serve immediately with sambar, coconut chutney and potato masala.
