Sooji Halwa Recipe
Ghee-roasted sooji halwa — golden, fragrant, 25-minute sweet. The go-to post-puja prasad and dessert-in-a-hurry.
Ingredients
- 1 cup sooji (rava)
- 1 cup sugar
- 1/2 cup ghee
- 3 cups water
- 1/2 tsp cardamom powder
- 10 cashews, chopped
- 10 raisins
- Pinch of saffron
How to Make Sooji Halwa
- Boil water with saffron in a pot. Keep hot.
- Heat ghee in heavy pan. Add cashews and raisins, fry till golden. Remove.
- Add sooji to remaining ghee. Roast on low 7 mins till golden brown and aromatic.
- Slowly add hot saffron water (careful, splatters). Stir continuously.
- Add sugar and cardamom, stir till halwa thickens and ghee separates. Garnish with fried nuts.
