How to Make Sooji Halwa

  1. Boil water with saffron in a pot. Keep hot.
  2. Heat ghee in heavy pan. Add cashews and raisins, fry till golden. Remove.
  3. Add sooji to remaining ghee. Roast on low 7 mins till golden brown and aromatic.
  4. Slowly add hot saffron water (careful, splatters). Stir continuously.
  5. Add sugar and cardamom, stir till halwa thickens and ghee separates. Garnish with fried nuts.
