Mix Veg Recipe
Restaurant-style mix veg — any 4-5 vegetables you have, tied together with onion-tomato gravy. The ultimate fridge-clearing recipe.
Ingredients
- 500g mixed veggies (carrot, beans, peas, cauliflower, capsicum)
- 2 onions, chopped
- 2 tomatoes, pureed
- 1 tbsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 tsp red chilli powder
- 1 tsp garam masala
- 1/2 tsp turmeric
- 3 tbsp oil
- Coriander, salt to taste
How to Make Mix Veg
- Heat oil, add cumin. Add onions, sauté till golden.
- Add ginger-garlic paste, sauté 1 min. Add tomato puree, cook 5 mins.
- Add all dry spices, salt. Cook 1 min. Add mixed vegetables.
- Add 1 cup water, cover, simmer 12 mins till veggies are tender.
- Finish with garam masala, coriander. Serve with roti or rice.
