Veg Pulao Recipe
Fragrant veg pulao — basmati with mixed vegetables, whole spices, and ghee. One-pot dinner in 30 minutes.
Ingredients
- 1.5 cups basmati rice, soaked 20 min
- 1 cup mixed veggies (carrot, beans, peas, cauliflower)
- 1 onion, sliced
- 1 tbsp ginger-garlic paste
- Whole spices (bay leaf, cardamom, cloves, cinnamon)
- 1 tsp cumin seeds
- 2 tbsp ghee
- Mint, coriander, salt to taste
How to Make Veg Pulao
- Heat ghee, add cumin and whole spices. Add onion, sauté till golden.
- Add ginger-garlic paste, sauté 1 min. Add all vegetables, sauté 3 mins.
- Drain rice, add to pan, sauté gently 2 mins. Add 3 cups water, salt.
- Bring to boil, cover, cook on low 12 mins. Rest 5 mins off flame.
- Fluff with fork, garnish with mint and coriander. Serve with raita or curry.
